Tuna Salad

I love my mom's tuna salad! It doesn't matter if I use the same ingredients as her, it just tastes so much better when she makes it. This week I made my own version and served it over mixed greens with a side of marinated vegetables and cottage cheese. Hopefully this can stand up to her version!


Tuna Salad

Ingredients

- 2 (12 oz) cans of light chunky tuna in water

- 1/2 cup olive oil mayonnaise (add more if needed)

- 1/2 cup yellow mustard (add more if needed)

- 1/4 cup diced red onion

- 1/4 cup diced Claussen kosher dill pickles

- 2 boiled eggs diced

- Juice of 1/2 lemon

- Salt and pepper to taste

- Everything But The Bagel (EBTB) Sesame Seasoning

- 1/4 cup sliced almonds


Instructions

1. Combine ingredients except for EBTB and almonds in a medium sized bowl, mix and let chill.

2. Serve over greens (I prefer arugula) or spiralized cucumber.

3. Sprinkle EBTB and almonds on top.


Marinated Vegetables

Ingredients

- Cucumber slices

- Tomato slices

- Juice of 1/2 lemon

- 1/4 cup extra virgin olive oil

- 1 tablespoon Italian seasoning

- Salt and pepper


Instructions

1. Combine ingredients and let chill.
