Loaded Mac and Cheese

This cold weather is making me crave comfort food! Tonight we made loaded mac and cheese. This was pretty easy to make a gluten-free version in one pot and a gluten version in another.. just a couple more dishes to clean. I love adding broccoli to my mac and cheese to break up the creamy pasta texture. We added bacon for protein and of course I added hot sauce for some heat. The great thing about mac and cheese is you can basically add anything to it and it'll still taste great!
Loaded Mac and Cheese
Ingredients
- 4 oz. gluten free pasta (I used this)
- 1 tablespoon butter
- 1/3 cup milk
- 1 cup shredded sharp cheddar cheese
- Salt and pepper to taste
- 2 pieces of cooked bacon diced
- 1 head of broccoli sauteed
Instructions
1. Cook pasta according to instructions.
2. Drain pasta in colander and return to pot.
3. Add butter, milk, cheese, salt and pepper and gently stir until cheese has melted.
4. Add additional milk or cheese as needed.
5. Add bacon, broccoli, and pepper sauce.
