Homemade Indian Food

I can't stop talking about how obsessed I am with Cookie and Kate's cookbook Love Real Food. I normally only find a few recipes I want to make from a given cookbook, but this whole food vegetarian collection has me wanting to make every.single.dish!


All I wanted to do Saturday night was make her Chickpea Tikka Masala with a gluten free "naan", drink red wine and watch movies. I ended up doing a modified version of her Chickpea Tikka Masala not because it needed any changes but because I didn't have all of the ingredients at home so I improvised. Go buy this cookbook now so that you can enjoy this wonderful dish!! It would also be a great Christmas present!


The Whole Foods by my house didn't have a gluten free naan so I decided to use a cauliflower crust instead, see steps below. It totally hit the spot on a cold winter evening.


Oh and if you're curious, I ended up watching Nights in Rodanthe and Under the Tuscan Sun because I'm a sucker for any movie with Diane Lane :).


Gluten free "naan"

Ingredients

- Cauliflower crust

- Butter or ghee

- Minced garlic

- Fresh parsley


Instructions

1. Preheat oven (follow baking instructions on cauliflower crust packaging).

2. Coat cauliflower crust with butter or ghee and garlic.

3. Bake according to cauliflower crust packing.

4. Add another coat of butter or ghee and fresh parsley.
