Artichoke Bites

I love having my friends over! It gives me motivation to deep clean the house and I love making food for other people. I recently made these artichoke bites for a girl's night Christmas exchange. I made them to eat as an appetizer but I have actually enjoyed them better as leftovers with eggs or turkey meatballs. Sandra Lee's Feta-Stuffed Artichoke Bottoms recipe was my inspiration.
Artichoke Bites
Ingredients
- 2 cans (14 oz each) artichoke hearts
- 1/2 cup chopped jarred roasted red bell peppers
- 1/2 cup crumbled or cubed feta cheese
- 1 tablespoon extra virgin olive oil (evoo)
- Balsamic glaze (Similar to this. Balsamic glaze is a pantry staple for me. I like adding it to eggs, pizza, and Mediterranean food).
Instructions
1. Preheat broiler and line a baking sheet with parchment paper. (I highly recommend buying parchment sheets like these. They are much easier than rolled parchment paper which tends to curl).
2. Cut artichoke hearts in half.
3. In a medium bowl, combine the red bell peppers, feta, and evoo. Place artichoke halves on the lined baking sheet. Top artichokes with 1 tablespoon of stuffing.
4. Broil 10 minutes or until golden on top.
5. Transfer artichokes to serving dish and top with balsamic glaze.
